Avocado Toast

Ingredients:

· Half ripe avocado

· Fine salt and freshly ground black pepper

· 4 slices of whole-grain or bread

· 1 clove garlic, peeled and halved

· 2 tablespoons extra virgin olive oil / unsalted butter

· Sea Salt

· Crushed chili

Recipe:

· Mash the butter with a fork in a shallow bowl until pureed. Season with butter and salt and black pepper

· Toast until brown and crispy. Gently rub one side of each slice with garlic until fragrant.

· Gently brush the bread with oil and season with salt and pepper. Divide the butter evenly between toast, and top with sea salt

· Add as much black pepper and red chili powder as you like

Panko Baked Avocado Tacos


Ingredients:

· 2 large ripe avocados

· 2 tablespoons (tbsp) olive oil

· 2 tablespoons whole almond milk, no sugar

· 3/4 panko bread

· 1/4 teaspoon (tsp) salt + pepper

· 1/2 teaspoon dill

· 1/2 teaspoon garlic powder

· 7 tortillas

· 3/4 cup cooked pinto or black beans

· 2 whole radishes

· Fresh cilantro

· Hot sauce/salsa

Recipe:

· Preheat the oven to 450 degrees F, lined a baking sheet with foil.

· Mix almond milk and oil in a shallow bowl and mix panko breadcrumbs and spices in another shallow dish.

· Cut the avocados in half and remove the excess. Then put half of the avocado down and cut into 3 equal parts. Each avocado should produce 6 pieces. Repeat until you have 12 pieces. Gently peel the avocados.

· Dip the avocados in an almond-olive oil mixture, then switch to the panko spice mix and use a spoon to cover it lightly. Transfer those avocados carefully to the foil baking sheet and repeat until all the avocados are coated.

· Bake for 10-12 minutes or until the avocados turn light brown.

· Prepare toppings: Warm the beans, slice the lemon, chop the cilantro.

· Once the avocados have been baked, remove from the oven, and immediately put it into tacos.

Chilled Artichoke Avocado Spring Pea Soup

Ingredients:

· 1 tbsp olive oil or butter

· 2/3 cup chopped onions or scallions.

· A little sea salt or kosher salt

· 1 3/4 cup to 2 cups pure water or broth

· 12 ounces of fresh or frozen beans

· 1/3 cup artichoke

· 1 medium avocado

· 1 clove of garlic or 2 teaspoons minced

· 3-4 fresh basil leaves

· 1/2 cup Greek yogurt or coconut milk

· 1/4 tsp of black pepper

· 1/2 teaspoon red chili powder

· Sea salt and black pepper

Recipe:

· Melt butter or olive oil in a medium pot, over medium heat. Add the onions and stir fry until the onions are fragrant (about 5 minutes)

· Add a little sea salt and water or broth to the pot. Stir to combine and bring to a boil. Add peas and artichokes and cook, occasionally stirring, until the beans are soft, about 2 -3 minutes.

· Peel the avocados and remove the pit.

· Put the bean soup mixture in a blender and add butter, garlic, basil, yogurt, black pepper, and chili powder.

· Mix all the mixtures in 2-3 minutes until the creamy texture is formed.

· Put the soup back into the pot. Season with salt and pepper, stir to combine.

· Served warm or store the soup in the refrigerator for 30 minutes.

· Spoon into a bowl and drizzle with infusion oil / and a little cream if desired.

· Garnish with cracked peppercorns, baked nuts or gluten-free (crushed) nut biscuit and basil

· You can store this dish in the cooling mode in 3 weeks and freezer in 3 months.

Avocado Pasta

Ingredients:

· 1 bag of spaghetti

· 1 ripe avocado

· 1/2 cup fresh basil leaves

· 2 cloves of garlic

· 2 tbsp freshly squeezed lemon juice

· Kosher salt and freshly ground black pepper

· 1/3 cup olive oil

· 1/2 cup cherry tomatoes

· 1/2 cup canned corn kernels

Recipe:

· Drop the spaghetti into the boiling water until it's soft. Then take out.

· Avocado sauce: Mix avocados, basil, garlic, and lemon juice in a bowl of a food processor. Season with salt and pepper.

· Add olive oil in a slow flow until emulsified; set aside.

· Mix spaghetti with avocados sauce, tomatoes, and corn in a large bowl.

Avocado Icecream

Ingredients:

· 3 ripe avocado

· Condensed milk

· Lime juice

· 3/2 cup of heavy cream

· 1/2 cup of milk

Recipe:

· Put all ingredients in a blender and puree until smooth.

· Transfer the mixture to a container and refrigerate it for about 4 hours.

· After 4 hours, prepare the mixture in an ice cream maker for about 20 minutes or until it has a firm texture.

· Serve immediately to soft-serve or bring it back to the freezer for a few more hours.
